Panzanella (Italian Bread Salad)

Ingredients

  • 200g ciabatta without crusts, torn into pieces
  • 60ml white wine vinegar
  • 3 ripe tomatoes, diced
  • 1 large red onion, finely sliced
  • 1 bunch basil
  • 75 ml Olive Pride Extra Virgin Olive Oil
  • Salt and black pepper

Instructions

Tear bread into pieces and lay out to dry overnight

Soak bread in vinegar

Add tomatoes and onions to bread

Tear basil and add to salad with oil

Season and leave to infuse for 20 minutes
