Basics don’t have to be boring when you have this Balsamic Onion and Bacon Jam on hand. This is the perfect addition to a cheeseburger, or simply on top of a fresh slice of warm bread. This simple yet delicious recipe makes use of everyday ingredients that you most likely already have stored in your larder.
Onion and Bacon Jam
- 4 onions, peeled, halved and thinly sliced
- 1 Bouquet garni (2 bay leaves, 1 sprig of rosemary and a bunch of parsley tied together).
- ¼ cup vegetable stock
- ½ cup Olive Pride 3 Leaf Balsamic Vinegar
- ¼ cup dry white wine
- 2tbsp brown sugar
- 6 rashers of thick cut bacon, chopped
- Salt, to taste
Fry the bacon in a hot saucepan until just cooked (not crispy).
Remove the bacon and drain on a paper towel, but reserve about two tablespoons of bacon fat in the saucepan.
Lower the heat to medium then add the sliced onions.
Stir to coat the onions in the bacon fat.
Season to taste and cook for about 20 minutes - until the onions are soft.
Add the herbs, balsamic vinegar, white wine, bacon and vegetable stock.
Simmer on low for about 30 minutes, occasionally stirring, until the mixture has thickened.
Taste and adjust seasoning if needed.
Remove from the heat, take out the bouquet garni and leave to cool completely.
Spoon into a jar and pop into the fridge or use immediately – delicious on cheeseburgers!
This will keep in the fridge for 2 days.
