Ham and Cheese Croquettes
Ingredients
- 1½ cups mashed potatoes
- ½ cup all-purpose flour
- ½ cup Clover Elite Mature Cheddar
- 1 cup ham, diced
- Salt and pepper to taste
- 1tsp mustard powder
- 1tsp cayenne pepper
- Olive Pride Blend of Seed Oils and Extra Virgin Olive Oil, for frying
Instructions

Mix potatoes, cheese, flour and ham until properly combined.

Add seasoning, cayenne and mustard powder and combine.

Rub your hands with flour, and shape mixture into golf-sized balls.

Add more flour if too sticky and keep flouring your hands.

Pop into the fridge to firm up – about an hour.

Heat oil in a large non-stick skillet on a medium to high heat.

Carefully drop croquettes into hot oil and fry for about four minutes a side, until golden and crisp.

Serve with your favourite dipping sauce and homemade pickles.
