A Trio of Salad Dressings
Ingredients
- 1. FRENCH DRESSING
- 1 shallot or small onion, very finely chopped
- 4tbsp white wine vinegar
- Maldon salt, to taste
- 2tbsp Dijon mustard
- 180ml Olive Pride Extra Virgin Olive Oil
- Cracked black pepper, to taste
- 1 garlic clove, minced
- ½tsp caster sugar
- 2. ITALIAN DRESSING
- ¾ cup Olive Pride Extra Virgin Olive Oil
- ¼ cup white wine vinegar
- 2tbsp water
- 2 garlic cloves, minced
- 1tsp salt
- 1tsp oregano
- ½tsp cracked black pepper
- 2tbsp finely grated parmesan cheese
- 3. GREEK DRESSING
- ½ cup Olive Pride Extra Virgin Olive Oil
- ½ cup red wine vinegar
- Juice of 1 lemon
- ½ tsp caster sugar
- 1tbsp dried oregano
- 1tsp dried basil
- 2 garlic cloves, minced
- 3tbsp plain Greek yoghurt
- Salt and cracked black pepper, to taste

1. FRENCH DRESSING:

Put all the ingredients in a mixing bowl.

Whisk until the dressing thickens.

Decant the dressing into a glass bottle or jar and seal.

Keep in the fridge for up to one week.

2. ITALIAN DRESSING

Combine all the ingredients in a jar and give it a good shake until everything is combined.

Seal and keep in the fridge for up to one week.

3. GREEK DRESSING:

Combine all the ingredients in a glass jar.

Pop the lid on and shake vigorously until properly combined and creamy.

Seal jar and keep in the fridge for up to one week.
