A Trio of Salad Dressings

Ingredients

  • 1. FRENCH DRESSING
  • 1 shallot or small onion, very finely chopped
  • 4tbsp white wine vinegar
  • Maldon salt, to taste
  • 2tbsp Dijon mustard
  • 180ml Olive Pride Extra Virgin Olive Oil
  • Cracked black pepper, to taste
  • 1 garlic clove, minced
  • ½tsp caster sugar
  • 2. ITALIAN DRESSING
  • ¾ cup Olive Pride Extra Virgin Olive Oil
  • ¼ cup white wine vinegar
  • 2tbsp water
  • 2 garlic cloves, minced
  • 1tsp salt
  • 1tsp oregano
  • ½tsp cracked black pepper
  • 2tbsp finely grated parmesan cheese
  • 3. GREEK DRESSING
  • ½ cup Olive Pride Extra Virgin Olive Oil
  • ½ cup red wine vinegar
  • Juice of 1 lemon
  • ½ tsp caster sugar
  • 1tbsp dried oregano
  • 1tsp dried basil
  • 2 garlic cloves, minced
  • 3tbsp plain Greek yoghurt
  • Salt and cracked black pepper, to taste

Instructions

1. FRENCH DRESSING:

Put all the ingredients in a mixing bowl.

Whisk until the dressing thickens.

Decant the dressing into a glass bottle or jar and seal.

Keep in the fridge for up to one week.

2. ITALIAN DRESSING

Combine all the ingredients in a jar and give it a good shake until everything is combined.

Seal and keep in the fridge for up to one week.

3. GREEK DRESSING:

Combine all the ingredients in a glass jar.

Pop the lid on and shake vigorously until properly combined and creamy.

Seal jar and keep in the fridge for up to one week.
