Sweet Balsamic Strawberries with Ginger Biscuits and Smooth Vanilla Ice Cream

Ingredients

  • 80ml Olive Pride 3 Leaf Balsamic Vinegar
  • ¼ cup brown sugar
  • 250g strawberries, cleaned and halved
  • 1 large egg
  • 1 cup caster sugar
  • 125ml Olive Pride Blend of Seeds Oils and Extra Virgin Olive Oil
  • 60ml golden syrup
  • 2 cups flour
  • 1tbsp ground ginger
  • 1tsp ground cinnamon
  • 2tsp bicarbonate of soda
  • Vanilla ice cream to serve

Instructions

In a small saucepan, combine the balsamic vinegar and sugar over low heat until sugar has dissolved, and mixture has reduced by half

Allow the mixture to cool slightly and stir the strawberries in.

Remove from the saucepan and refrigerate

In a bowl, beat together the egg, caster sugar and oil until well combined and pale

Add the golden syrup and continue beating.

Sift in the flour, ginger, cinnamon and bicarbonate of soda

Mix together using a spoon to form a slightly sticky dough

Roll the dough out onto a floured surface to 5mm thick

Use a cutter to cut biscuits out.

Place onto a baking tray and bake for 10 minutes

Allow the biscuits to cool slightly before cooling completely on a wire rack

When ready to serve, plate the biscuits and top with vanilla ice cream and the chilled balsamic strawberries
