Olive Oil, Lemon and Vanilla Cake

Ingredients

  • 300g self-raising flour
  • 300g caster sugar
  • 1tsp baking powder
  • Zest of ½ lemon
  • 10ml lemon essence
  • 10ml vanilla essence
  • 3 large eggs
  • 250ml Clover Full Cream Fresh Milk
  • 100ml Olive Pride Blend of Seeds Oils and Extra Virgin Olive Oil
  • FOR ICING:
  • 2 cups Icing sugar
  • Juice of ½ a lemon
  • 30ml Clover Full Cream Fresh Milk

Instructions

Preheat the oven to 180°C

Sift the dry ingredients in a bowl

Add the lemon zest

In a jug combine the lemon essence, vanilla essence, eggs, milk and olive oil.

Mix until well combined

Whisk the wet ingredients into the dry ingredients until well combined

Pour the mixture into a greased baking tin and bake for 45 minutes or until golden and cooked through

Remove from the oven and place on a rack to cool completely

FOR ICING:

In a bowl whisk the ingredients until well combined

Drizzle over the cake and allow to stand for 10 minutes before serving
