Oil-Roasted Potatoes

Ingredients

  • 1kg potatoes, par-boiled in their skins, cooled
  • 300ml Olive Pride Extra Virgin Olive Oil
  • 100ml Olive Pride Blend of Seed Oils and Extra Virgin Olive Oil
  • 6 cloves garlic, unpeeled
  • 1tsp black sesame seeds
  • 1tsp coarse salt
  • ½ tsp cumin powder
  • ¼ tsp coarse black pepper

Instructions

Preheat oven to 200 degrees Celsius with fan on

Peel potatoes and cut into large chunks

Place all remaining ingredients and the Blend in a deep roasting pan and heat on the stovetop.

When the aromatics are sizzling, add the potato chunks and coat with olive oil

Roast in the oven until golden brown, turning occasionally, about 30 - 40 minutes

Drain & serve

Retain the oil for future roasting
