Moist Chocolate, Coffee and Hazelnut Cake

Ingredients

  • 2 cups cake flour
  • 2tbsp cocoa powder
  • 2tsp baking powder
  • ½ tsp salt
  • 1 cup caster sugar
  • 250ml Clover Full Cream Fresh Milk
  • 125ml Olive Pride Blend of Seed Oils and Extra Virgin Olive Oil
  • 2tbsp instant coffee dissolved in 100ml boiling water
  • 3 extra large eggs
  • FOR TOPPING:
  • 100g toasted hazelnuts
  • 100g chocolate, melted

Preheat oven to 180°C

Grease and line a round cake tin

In a bowl sift the dry ingredients (flour, baking powder, cocoa powder, caster sugar)

In a jug combine all the liquid ingredients (eggs, milk, oil, instant coffee) and whisk until well combined

Pour the liquid ingredients into the bowl of dry ingredients and fold in until well combined to a smooth batter

Pour the mixture into the prepared cake tin and bake for 45 minutes until cooked through

Remove the cake from the oven and allow to stand in the tin for 5 minutes before removing and continue cooling on a wire rack

Top with roasted hazelnuts and melted chocolate and serve

Notes

Tip: Wait for the cake to bake for at least 25 – 30 minutes before checking with a skewer if ready. This will minimise the risk of it collapsing. Add any flavour to the cake if coffee doesn't do it for you. Use hazelnut essence, caramel or even vanilla.
