Mixed Onion Tart
Ingredients
- 2 red onions, sliced
- 2 white onions, sliced
- 7 baby shallots, sliced
- 4 sprigs thyme
- 15ml Olive Pride Blend of Seed Oils and Extra Virgin Olive oil
- 2tbsp butter
- 3tbsp brown sugar
- Salt and pepper to taste
- 1 roll readymade puff pastry, thawed
- 1 egg, beaten
- 1/3 cup sour cream
- 6 baby spring onions, chopped
- Handful coriander, chopped
- 10-12 slices mozzarella cheese
- 30ml Olive Pride 3 Leaf Balsamic vinegar
Instructions
Preheat oven to 180°C
In a pan sauté the red onions, white onions and shallots with the thyme, oil, butter, and sugar. Season
Continue cooking over medium heat until onions are soft, and liquid is absorbed
Set the mixture aside to cool
Roll the pastry out slightly and make a border incision being careful not to cut through
Prick the inside of the border with a fork and brush the whole roll with the beaten egg
Spread the sour cream mixture over the middle and top with the slightly cooled onion mixture
Top with spring onion, coriander, cheese and drizzle with balsamic vinegar
Place in the oven and bake for 30 – 40 minutes
Remove from the oven and serve with extra coriander
