Masala Pulled Pork Sandwich with Pickled Slaw
Ingredients
- 2kg boneless pork roast
- 3tbsp ground masala spice
- 1 cup Olive Pride 3 Leaf Balsamic Vinegar
- 375ml coconut milk
- 1 clove garlic, crushed
- 1 thumb ginger, grated
- 60ml Honey
- 200ml Tomato paste
- 1tbsp Mustard powder
- 1 sprig rosemary, chopped
- FOR SLAW:
- 2 red apples, grated
- 1 red onion, thinly sliced
- 4 baby cabbages, shredded
- Handful fresh coriander, roughly chopped
- 45ml apple cider vinegar
- 1tbsp brown sugar
Instructions

Preheat oven to 180°C

In a deep baking tray place the pork and rub with the masala

Combine the remaining ingredients and pour over the meat

Cover with foil and bake for 2 hours or until tender

Remove the meat from the oven and shred using two forks or your hands

Toss in the pan juices and set aside keeping it warm

FOR SLAW:

In a bowl combine all the ingredients and allow to settle covered in the fridge for at least an hour

When ready to serve, place some of the pulled pork onto a toasted roll/bread

Top with the slaw and any sauce of your liking

Serve immediately as the slaw will make the bread soggy
