Lamb Kebabs with Quick Slaw
Ingredients
- 500g lamb, cubed
- Salt and pepper
- 5ml ground cumin
- 5ml ground coriander
- 2,5ml chilli flakes
- 10ml crushed garlic and ginger
- 5 ml mixed dried herbs
- White cabbage, shredded
- Purple cabbage, shredded
- 2 carrots, peeled and grated
- 1 red onion, finely sliced
- Fresh coriander, chopped
- 45ml sesame paste
- 60ml Olive Pride Extra Virgin Olive Oil
- 30ml mayonnaise
- 15ml dark soy sauce
Instructions
In a bowl, season the lamb mince with salt and pepper
Add the cumin, coriander, chilli flakes, ginger, garlic and mixed herbs
Add the Olive Pride Extra Virgin Olive Oil to loosen the mixture.
Combine and set aside
Soak the skewers sticks in water for 5 minutes
Place a few pieces of meat on each skewer and place in the fridge to continue marinating for 30 minutes
In a bowl combine the remaining ingredients and combine until mixed well
Set aside in the fridge until needed
Heat a pan and add a little Olive Pride Extra Virgin Olive Oil
Cook the kebabs for 15 minutes on each side over medium heat until cooked through
Remove and serve warm with the slaw and rotis
Notes
Tip: If lamb is not to your liking you can use beef or chicken cubes, or any firm white fish.
