Ingredients

  • 200g sugar
  • 125ml hot water
  • 125 ml Olive Pride Blend of Seed Oils and Extra Virgin Olive Oil
  • 250g cake flour
  • 20g baking powder
  • 4 eggs, separated
  • 4tsp instant coffee powder

Instructions

Place cupcake cases in a muffin tin

Sift the dry ingredients

Mix the coffee powder into the hot water

Whisk the sugar and oil, then add in hot water and the egg yolks

Whisk the egg whites to stiff peaks

Fold in the dry ingredients carefully

Fold in the egg whites

Pour into the moulds and bake in a medium oven at 160 degrees Celsius for 10-12 minutes
