Chicken Basquaise

Ingredients

  • 1 chicken, cut to sauté
  • 3tbsp flour
  • 2tsp sweet paprika
  • ½ tsp cayenne pepper
  • Salt and pepper
  • 50ml Olive Pride Blend of Seed Oils and Extra Virgin Olive Oil
  • 1 onion, halved and sliced
  • 1 ea red, yellow, green pepper, cut to strips
  • 6 cloves garlic, peeled and sliced
  • 150g Olive Pride Pitted Olives in Brine (black and green)
  • 200ml white wine
  • 200ml chicken stock
  • 2tbsp chopped parsley
  • 1tsp dried mixed herbs
  • 30ml Olive Pride Extra Virgin Olive Oil

Instructions

Sprinkle the chicken pieces in mixed flour, paprika, cayenne and seasoning

Sauté the chicken in hot oil until well-browned.

Remove chicken and keep to the side.

Sauté the vegetables and olives in oil until softened and hot

Add wine, bring to boil, and reduce by half

Add chicken pieces and stock

Bring to boil and then simmer for 20 minutes

Check for doneness and adjust seasoning

Add herbs and stir to incorporate

Serve with a drizzle of olive oil
