Caponata

Ingredients

  • 1 large brinjal
  • 1 onion
  • 2 stalks celery
  • ½ bulb fennel
  • 1 baby marrow
  • 3 plum tomatoes
  • 1 bunch basil, roughly chopped
  • 50g sultanas
  • 50g pine nuts, lightly toasted
  • 100g Olive Pride Extra Virgin Olive Oil
  • 75g red wine vinegar
  • 15g tomato puree
  • 15g caster sugar
  • Salt and black pepper

Instructions

Cut all vegetables into different shapes

Sweat onions in oil without colour

Deep fry celery, fennel, brinjal and baby marrow (in that order) until golden and then drain on paper

Combine all vegetables in a bowl and add remaining ingredients

Cover with cling-film and leave to infuse for 30 minutes before serving at room temperature

Add chopped bitter chocolate for authentic Sicilian style
