Burger Sauces

Ingredients

  • FOR PEPPADEW PESTO:
  • 280g Peppadews
  • 2 garlic cloves
  • 250g fresh coriander
  • 100g roasted cashew nuts
  • Robot peppers, roasted and deseeded
  • Salt and pepper
  • 180ml Olive Pride Extra Virgin Olive Oil
  • FOR BLUE CHEESE AND BILTONG SAUCE:
  • ½ red onion, finely diced
  • 15ml Olive Pride 3 Leaf Balsamic Vinegar
  • 10g brown sugar
  • 100g soft biltong, chopped
  • 250ml Clover Fresh Cream
  • 100g blue cheese, crumbled
  • 10g coarse black pepper
  • FOR AVOCADO AND OLIVE DIP:
  • 2 avocados
  • 200g Olive Pride Pimento Stuffed Olives
  • 2 cloves of garlic
  • 15ml lemon juice
  • Salt and pepper

Instructions

PEPPADEW PESTO

Roughly chop the peppadews, garlic, coriander, nuts and peppers

Combine with the remaining ingredients in a blender

Using the pulse setting, pulse the ingredients to form a smooth yet chunky pesto

Season with salt and pepper Place in a bowl and refrigerate until needed

BLUE CHEESE AND BILTONG SAUCE:

In a saucepan sauté the onions, with the vinegar and sugar until onions are soft

Add the biltong and stir in the cream

Add the crumbled cheese and allow to melt and reduce until sauce thickens

Stir in the black pepper and keep warm over low heat until needed.

AVOCADO AND OLIVE DIP

In a blender place the avocado flesh and the remaining ingredients and blend to form a smooth dip

Season with salt and pepper and refrigerate until needed

Notes

Tip: Lightly toast the burger buns to avoid a soggy roll. Use any burger patty you would like and create a flavour that works for you.
