Breakfast Crumpets

Ingredients

  • 1 cup flour
  • 2tsp baking powder
  • A pinch of salt
  • 1tbsp sugar
  • 1 large egg
  • 150ml Clover Full Cream Fresh milk
  • 15ml Olive Pride Blend of Seed Oils and Extra Virgin Olive Oil
  • 1 packet streaky bacon

Instructions

Preheat oven to high

Sift the dry ingredients together in a bowl

In a jug, whisk together the egg, milk and oil to combine. Add to the dry ingredients to form a smooth batter

Place in the fridge for 30 minutes

Line a baking tray with baking paper

Place the bacon on the tray and bake in the oven until cooked and crispy.

Remove and set aside

Grease a frying pan and place over a low to medium heat

Pour a spoonful of batter and allow to cook for a minute until bubbles form

Place a few pieces of bacon and the drizzle more batter over

Allow the batter to run and cover the bacon before flipping over to cook on the other side for a few minutes

Remove the crumpets from the heat and keep warm.

Repeat the process until batter and bacon is finished

Notes

Tip: Chop up the crispy bacon and add to waffle mixture to make breakfast bacon waffles
