Baked Penne with Green Olives, Baked Feta and Tomato Sauce
- ½ onion
- 1 clove garlic
- 1 tin whole peeled tomatoes
- 200g cherry tomatoes
- 100g Olive Pride Pitted Green Olives in Brine
- 50g basil
- 100g Clover Feta cheese
- 250g penne
- 30ml Olive Pride Blend of Seed Oils and Extra Virgin Olive Oil
- Salt and pepper to taste.
Heat oven to 200 degrees Celsius.
Roast cherry tomatoes on high heat until cooked.
Chop onion and garlic, and fry in the oil.
Add tomatoes and simmer until thickened.
Season and add olives and basil.
Cook penne in boiling salted water until al dente.
Mix cooked penne with sauce and oven roasted tomatoes, and place in an ovenproof dish.
Top with Clover Feta and bake at 200 degrees Celsius until golden (approx. 10 minutes).
